Ingredients

500 g veal cubes (round)
1 tbsp olive oil 15 mL
1 onions, minced 200 g
1 carrots, coarsely cut into 2 cm pieces 100 g
2 turnips, coarsely cut into 2 cm pieces 340 g
2 bay leaf 0.4 g
2 tbsp butter, unsalted 30 g
9 pearl onions 110 g
10 button (white) mushrooms, quartered 140 g
2 tbsp white flour (all purpose) 16 g
1 tbsp Italian parsley, fresh, finely chopped 5 g
2 egg yolks
1/4 cup whipping cream 35% 65 mL
2 tbsp lemon, freshly squeezed 3/4 lemon
salt to taste
ground pepper to taste

Method

  1. Prepare the vegetables: peel the carrots and turnips, then cut into 2 cm pieces. Mince the onion. Quarter the mushrooms.
  2. Heat the oil in a large pot over medium heat. Add the onion, carrots and turnip, then sauté until they are tender, about 10 min. Set aside.
  3. Blanch the veal cubes in boiling water for 2 min, then place them in the cooking pot with the vegetables. Add 580 ml of water and bay leaves. Season with salt and pepper. Cook on low heat for 30 min.
  4. Meanwhile, blanch pearl onions in boiling water for 3 min. In a saucepan, put mushrooms and pearl onions and brown with 1 tbsp of butter for 2 minutes.
  5. Remove veal cubes and vegetables from broth. Keep 500 ml of broth. Make a roux with remaining butter and flour. Once roux is ready, add cream and yolks. Mix well. Add broth gradually, making sure to mix well between each addition.
  6. Put veal and vegetables back into the sauce. Keep sauce on low heat and add lemon juice and italian parsley. Serve on top of white rice or noodles.
