Whether they are served as a snack, a main course or at a buffet, «quesadillas» are always a runaway hit with kids of all ages.
It is a traditional Mexican dish made up of simple wheat or corn tortillas that are filled with Oaxaca «queso» (meaning cheese) which is very soft and melts easily. The filling can vary according to one’s taste and according to what is available in your refrigerator.
The recipe that I’m proposing here requires cooking in a non-stick pan. For larger quantities, I prefer to broil the «quesadillas» in the oven for roughly 2 minutes per side, at about 10 cm from the heat.
