Ingredients

2 eggs size large
2 egg whites 4 tbsp
1 1/2 cup white flour (all purpose) 200 g
1 cup soy beverage, unsweetened, fortified 250 mL
1/2 cup whipping cream 35% 125 mL
2 1/2 tbsp sugar 30 g
2 tbsp margarine non-hydrogenated , low sodium 26 g
1 1/3 cup ricotta cheese, light 280 g
1 tsp vanilla extract 5 mL
2 cups strawberries 300 g

Method

  1. Beat the eggs and the egg whites in a bowl until fluffy. Add the flour, the soy milk, the cream and 1 tablespoon of sugar. Mix well.
  2. Coat the pan with melted margarine and pour in 3 tablespoons (45 mL) of the batter. Cook the crepes on both sides. Place a piece of waxed paper between each of the cooked crepes.
  3. Beat the ricotta cheese into the cream and add the rest of the sugar and vanilla. Carefully incorporate the strawberries. Place some of this mixture in the center of each crepe.
