Ingredients

2 slices bread, whole wheat 70 g
1 tbsp olive oil 15 mL
3 tbsp extra virgin olive oil 45 mL
4 tsp white vinegar 20 mL
1 tbsp honey 22 g
1/2 tbsp whole-grain mustard 8 g
1 shallots, finely chopped 40 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
8 cups field salad 200 g
4 radishes, thinly sliced 60 g
1 avocados 170 g

Before you start

A mandolin will make slicing easier.

Method

Make the croutons:

  1. Preheat the oven to 175°C/350°F. Oil a baking sheet (with about 1 teaspoon of oil per serving). Lay the bread cubes on the sheet and coat them thoroughly with olive oil. Bake in the middle of the oven until golden, about 10 min. Set aside.

Make the dressing:

  1. In a glass jar, combine the extra-virgin olive oil, vinegar, honey, mustard and shallot. Salt and pepper. Close the jar and shake vigorously to combine. Set aside.

Dress the salad:

  1. Wash the lettuce, spin-dry, then put it in a salad bowl. Thinly slice the radish then add to the bowl. Cut the avocado in half lengthwise, working around the stone. Twist to open, remove the stone and peel. Cut the avocado into pieces then add them to the salad bowl.
  2. Toss the salad with the croutons and the dressing until the salad is well combined. Serve.
